If all these sticky outdoor drinking spots leave you craving a cool and calm watering hole away from the madness, look no further than Dickie’s Bar. Opening this week, Richard Corrigan’s new late-night drinking spot is a collaboration with Gregory Buda from The Dead Rabbit in New York (voted the World’s Best Bar in 2016) and Richard Ryan, founder of Drinksology. The menu will largely be determined by the season’s harvest on Corrigan’s estate Virginia Park Lodge in Cavan, Ireland, which they describe as leading a “culinary approach to cocktail creation”. Continuing with the theme, there will be a strong selection of Irish whiskies and cocktails inspired by that wild Irish landscape as well as home-infused sodas and tinctures (again using the Park’s own ingredients), making this the Irish-American collaboration of your dreams.
