If you google the Basque Country, you will always find Basque cuisine near the top of the list of autocomplete search options. The rockstar-like legend and popularity of the region’s food is thanks in no small part to Arzak, the three-Michelin-starred restaurant in San Sebastián which dates back to 1897, when the house the restaurant occupies was built by current chef patron Juan Mari Arzak’s grandparents. For those who can’t make the trip to the continent the new menu at Ametsa, at COMO The Halkin, gives you a good sense of what to expect. Led by Juan Mari’s daughter Elena, who was voted the World’s Best Female Chef in 2012, and in collaboration with her father, and Mikel Sorazu, Igor Zalakain and Xabier Gutierrez, the new menu is all about the transition from winter to spring. Expect classic Basque ingredients like scorpion fish, txistorra sausage, Basque chillies and Arzak’s signature mojo sauces—all with a little British twist.
